Kundalini Yoga with Ravi Singh & Ana Britt

#2 in My Favorite Things Series, From Seed to Soul.

 

Ravi Singh and Ana Britt have changed my life for the better.Many of you know that I earned my yoga teacher certification two years ago. I am in love with yoga, no doubt about it. But, I did not fall in love as much then as I have in the last several months with Kundalini Yoga. Not just any Kundalini Yoga, mind you, the yoga DVD's by Ana and Ravi.

Kundalini yoga has different moves than traditional yoga or yoga poses that you might be familiar with or seen in the media more predominantly. Sometimes I wonder, "Where the heck did they get this move from?" Each are unique. Some feel so weird at first. The movement is easy, relaxed and constant rather than static. Perhaps this is what I like as it is hard to hold me still.

Ravi has this special talent of saying just the right thing at the right time, empowering me through my life. And, Ana, well she is such a pleasure to watch. She is adorable as well as a great model to workout with. I find these DVD's to be timed and paced perfectly. The music is also awesome. My spine is awakened, my breath expanded, my energy renewed and my soul recharged from the time I spend on the mat with them.

Check out their website and begin. Here are a few of my favorite titles: A Journey Through the Chakras, Bliss Hips, AM-PM Yoga, and Yoga for Beginners and Beyond. All offer a unique workout and many offer you the ability to choose your own matrix or workout sequence.

The bottom line is that these DVD's do more for me than any workout because they empower me in life in all ways. The sayings that go along with the fabulous music rock my soul and take me to a deeper place. Seriously, working out with them is one of my favorite things to do everyday. I love these DVD's and Ravi and Ana.

Fruit Fat Smoothies

Yes, you read it right, "Fruit "Fat" Smoothies". For me, the omega rich ingredients from nuts and seeds are what make a smoothie made with frozen and fresh fruits great. The first person to teach me about raw foods was David Jubb in 1991. David and Annie were, and probably still are, masters at recipe creation. David would stand helm at the vita mix, and begin creating blends that were to live for.

The secret to his fruit smoothies was flax oil. When you think about it, what makes ice cream so good? It is the fat mixed with the sweet. The fat from the nut or seed gives a fruit smoothie substance and creaminess, not to mention a powerful nutritional punch! Now that chia and hemp seeds have come onto the scene there is even more creativity to be had in creating fruit smoothies.

For the smoothie in this picture, I threw in some papaya from a friend’s farm; mixed frozen berries, pineapple and banana, then added a full tablespoon of hemp seeds and Barlean's Flax Oil. The richness from this blend is good enough to eat with a spoon. We topped it with flax meal (Forti Flax from Barlean's), grabbed a spoon and enjoyed a cool and refreshing treat after a yoga workout. YUM.

When you make smoothies like this they will be so much more delicious, plus satisfying and healthy!

Probiotic Rich Smoothie with Beet Kvass

Now I know this looks slam dunk delicious. The good news is that it is! Plus it is excellent for your body nourishing it with probiotic richness.

Hoping that you make Beet Kvass, follow the recipe below or make up your own:

Ingredients for a Beet Kvass Smoothie:

1/2 cup Beet Kvass

1 banana (frozen or not)

A good squeeze of lime juice

1 cup or more of  frozen berries

Add water for desired consistency

Optional: 1 tablespoon of Barlean's Flax or Coconut Oil! Blend and serve.

My Journey With Mom & Self Care

Self Care

My heart is busting with grief today as I read about another shooting, and another person crazed out on pharmaceutical drugs. A Father is crying out about guns while most people don’t realize there might be a gun in a pill. Now, I am not saying the prescribed pills made him go crazy, but it is worth noting that every person who has committed a massive act of violence in the past 15 years was on, or had been on psychoactive drugs.  Most of them were young. But, psychoactive drugs are just a drop in the flood of physical, mental and emotional alterations from other meds such as addictive painkillers and opiates.

I am especially drawn to the effects of these opiates and painkillers after my last visit to Mom’s. Again I spent 4 weeks in her tiny house, absorbing the crazy world of their long term effects, not only the health of her body, but their effect on her inspiration, motivation and the human drive to express and create.

My Mom has become my teacher. She has shown me how I do not want to live, and even more importantly how I want to live out my remaining years. I write this for you, because I can see from my experience with her where we are headed. I see that we must become aware and impeccable with our choices today because it is what we do today that builds our body and life of tomorrow.

Mom has been taking 4 Vicodin a day for 15 years. She has been taking sleeping pills as well, plus many more other medications as prescribed for various reasons. The cycle began with Vicodin s for the pain in her colon from Crohn’s disease. Instead of addressing and healing the underlying condition of the intestinal wall, it was covered up with opiats. Perhaps the Vicodan would have been good short term to get her through a period of time of discomfort and to facilitate her healing, but it was the only remedy ever considered. 

What this practice did over time was diminish her inspiration and motivation for her to take any other action toward healing her fragile intestinal system. She was never even presented with an option for healing. Her diet of Vicodin consequently resulted in her loss of appetite, which then led to malnourishment. The loss of motivation further led her to a diet of Insure – a can that was easy to open. The Insure, along with the Vicodin enhanced her addiction and led to severe constipation. Severe constipation led to laxatives, diapers, pain and discomfort. With inspiration and motivation gone all that was attractive was a life glued to her bed and TV.

This is a brief picture of how each symptom builds upon another until the quality of life is so altered that all that is left is existence without an appetite for other more fulfilling options that life can offer.

The addiction to the drugs/meds, led to the addiction of a lifestyle that consisted of very little travel, no meaningful work, loneliness, premature dependency, disorganization, fear, shame, embarrassment, Dementia, and the saddest part are the faded dreams unrealized.

In hindsight I did not totally comprehend what her lifestyle of addiction really meant until I visited her again this past April.  When I first arrived my Mother slept for 3 days. I sensed she was drugged and investigated eight of the meds she was taking.

One of them was for her dementia. The side effects were drowsiness. I decided to wean her off of it, lessening the dosage each day. She began to wake up and participate with more life in the following days. I made an appointment with the doctor to go over all the medications. We had to wait a week.

Then the chaos started. Two 911 calls were made due to the severe pain in her rectum. On the first visit they gave her an enema but nothing came out, if you know what I mean. During the next two days the confusion was insane. She would take laxatives again without telling anyone, and then forget that she took them. She would go to the toilet all night long, just releasing dribbles. Then she would sleep during the day. This meant no sleep for me since I was up with her during the night. The diarrhea resulted in a loss of electrolytes making her severely weak. In an effort to help her I tried everything I could think of to provide her relief. I failed. Upon further investigation we thought she might have a growth of some kind. Another 911 call. This time I wait and talk with doctors in the ER.  I tell them all the meds she is on and ask that they do an ultra sound to check for a potential block or growth. The doctor was amazing. He told me they would give her three enemas and then if nothing, he would manually excavate the colon. I looked at him in amazement. Are you serious? I am sure you can imagine the visual I conjured up in my mind.

She was cranky and I don’t blame her. The nurses were amazing, kind and compassionate. I decided to leave and let them handle her, as they were much better at it than I. It was 9:30 PM and I was hungry and tired. I left her to their care and proceeded home. The doctor called me at 1:30 AM saying she was released and I could come and get her. Oh darn, I was hoping they would keep her for the night – or longer. I was so tired and needed a space.

When I arrived at the hospital to pick her up the doctor told me he manually removed a few large (fist full size) balls of hard black fecal matter from her colon. I just stood there and stared at him again, getting a visual of what he went to medical school for. He told me he sees this all the time. Ouch.

As they wheeled Mom out she complained the entire way to the car saying, “I am never going back to this hospital again, they did not do a thing. They would not give me a blanket or anything, and I was freezing.” OMG, she had already forgotten the entire experience. Well, at least there are some advantages to Dementia.

The next few days she was able to absorb the benefits of fresh orange juice, steamed veggies, and a fried egg and toast. She blossomed. It was incredible to watch her bloom like a dry flower being watered.

This lasted a couple days until her addiction to Insure kicked in and she went to the store and bought several cases. Then the cans began to open and she refused the food I made because she was just “not hungry”.  The vicious cycle began to start again.

A couple days later the real sign of addiction reared its ugly head again when she misplaced her brand new prescription of Vicodin. We could not find them anywhere and she could not remember where she put them. I would explain to her over and over again that she misplaced them, but she did not remember. She thought I hid them from her. I tried to get more but the pharmacy and doctor would not give out another prescription because it is now a controlled substance. I thought that was an interesting word, “controlled”, because that is exactly what these drugs did to her. She was totally and completely controlled by them.

 She began to go through withdrawals and the confusion and chaos that ensued was more than I could ever explain here or more than you would ever want to know. Let’s just say that the bottom line of where this vicious cycle leaves you is complete dependency on the pharmacy and others for care.   

What I came away with was a deeper understanding of what this addiction to opiates caused her life. I had been witnessing her decline for over 15 years. When my Mom would say she was too lazy to make her own food, I remember that I judged her for her laziness. When she would cry and say she wanted to get the children’s songs, that she wrote when we were youngsters, published, I would give her instructions of how she could proceed, but she never did. When she longed to have friends over or go places and sing, she would end up giving into her bed. When I tried to teach her how to use her remote control to access the TV guide, she could not even entertain the concept of learning something new. I never understood it totally and I judged her for being so lazy, and not having any will to at least try.

After this last trip I realized that her will had been robbed from her through medications that dimmed her light, and stole her inspiration and motivation. I saw how the cycle had caused a system of living that now depended on the medications and then more medications to deal with the long-term side effects. 

I wondered, “Could she have chosen differently with the beliefs and mindset that she grew up with?”  I am not so sure. She believed that the doctor knew best, and that medicine cured. She felt that any other type of healing modality; an herb, diet or anything that resembled a healthy alternative approach meant that is was not “real”. She needed, wanted something stronger. I am not criticizing her choices, although I sure used to. I am not even saying she should have done things differently. What I am saying to myself, and to you, is that our elders are our teachers now. They are showing us the quality of life inspired by the path they chose. Now, as we become the elders, we might be able to choose from knowledge and wisdom rather than ignorance.

What do you want? Are you on medications now that may have long term effects? Is there something else you can do to heal or alleviate your symptoms? My Mothers doctor was not nearly as shocked as I was at his new duties of cleaning out colons. He confessed to me that he sees this all the time. It is becoming the new norm with the elderly. 

Although I am sure we are all doing what we can for self-care, perhaps we must become more wise and prudent of our practices today.  Bad habits are a form of addiction that form a lifestyle that can become a rut. Before we know it, years will have passed by, and all of a sudden it might be too late.

As I reflect on my own life and self-care I realize that I have created some very good, and some very un-healthy habits. I am seeing areas of my daily practices; mentally, physically and emotionally that could use a boost.  I am pondering my deepest needs and learning not to act out of habitual patterns but instead form new self care practices so that the light of my motivation and inspiration can still burn bright.

In many of my late night phone calls with my Mom, I sometimes hear that a flicker of inspiration still lives in her to actualize her dreams, but her lack of motivation pushes them into oblivion where they lay dead. Yes, she is 90, and I get that faded dreams are inevitable, but I find it sad that someone might feel, at the end of 90, that they have failed rather than lived. 

This is a difficult story to tell because there are so many underlying viewpoints and energies floating in the existence of life. My motivation in sharing this story is to bring up the act of “self care” and look closely to what it means without the veil of illusion. I hope to dive deep with you and others as to what “self care” really means and how we can rally to the challenge to care for ourselves with love, respect and wise choices so that we can live out our dreams, be a model for those that follow, and feel complete at the end of our journey.

Sesame - Coconut Oil Yams

This recipe is to live for! It is rich, succulent and full of nutrients. The flavors of these nutty oils and seeds combined with the sweetness of the potato delivers a rich and succulent meal.  It can be made as a single serving or a large dish to serve many.

I love it for dinner, and it is a great dish for a large party or potluck.

Ingredients:

Yam, Sweet Potatoes or Winter Squash

Hulled Sesame Seeds (ground to a course powder)

Barlean's Coconut Oil (a combination of coconut oil & flax is also delicious)

Celtic Sea Salt

Bake or boil potatoes. Cool slightly and peel off the skins. Cut up into small pieces and mix together in a bowl. It is nice to mix them to a fairly smooth, but lumpy consistency.

Pour melted coconut oil over the top and knead into the mixture. Sprinkle ground sesame powder lavishly over the top. Then salt to taste.  Bake in 350 degree oven for about 15 minutes (until warmed throughout).

Measurements: A serving for one large potato calls for about 2 tbsp of sesame seeds and 1 tbsp of coconut oil. Use this ratio when making large quantities, and adjust coconut oil to preference.

Chocolate Chip Cookies With Coconut Oil

Crispy, delicious and healthy all at the same time. Well, sort of. Seriously not to brag, but people say these are the best cookies they ever tasted. They are made with spelt flour, coconut oil, (instead of butter) organic brown sugar, vanilla, eggs, walnuts and organic dark chocolate chips. Basicially, it is the traditional Toll House chocolate chip cookie recipe but with different ingredients that make for a hearty substantial flavor. I cut the sugar which also makes them less sweet. YUM!

Try them for yourself. 

Ingredients:

2 1/2 cups    Spelt Flour

2 tsp             Baking Powder

1 cup            Coconut Oil

1 cup             Raw or Brown Sugar

2                    Eggs (whisked with a splash of water)

2 tsp              Vanilla

3/4 cup          Dark Chocolate Chips

1 cup              Finely Shredded Coconut Flakes (unsweetened)

1 cup              Chopped Walnuts

1/2 tsp or more of Celtic Sea Salt

Sift flour and baking powder together in one large bowl. Warm coconut oil and sugar together in a sauce pan. Be careful not to overheat the coconut oil with the sugar. You will be sorry. It will create a mixture that is impossible to get out of the pan. All it needs is warming enough to melt the coconut oil.

Mix eggs and vanilla together. Combine egg mixture with flour. Mix well and combine with coconut oil and sugar. Make sure coconut oil is not warm enough to cook the eggs. Mix well.

Next mix in chocolate chips, coconut and walnuts. Finish with salt at the very end. Mixture will be oily and may need about 5 minutes or so in the freezer to firm up for easier formation of cookies.

Place on cookie sheet and bake at 350 degrees for about 20 minutes. OMG! These cookies are divine. If you want to store them try freezing them immediately after they cool. This keeps them very fresh and wonderful to nibble on in the late afternoon with a cup of Mate.

Try using different types of gluten free flour.  You will find they always come out different, but they always come out GREAT!

Question: "How can I learn real nutrition in conventional schools?"

Recently I received this question from a college student studying nutrition:

Dear Susan,

How can I study nutrition without conforming to the influence and ideas of the FDA and big pharma companies? What I am being taught right now in school is not "let thy food be thy medicine" but more so "let thy food destroy thy health, and then take thy medicine." I don’t want to be a part of that. I want to be self sufficient, and sustainable. I want to grow my own food (though currently lack the space. eventually it will happen). I want to learn about the true, natural, concept of nutrition, that we are what we eat, and what we eat not only has a big effect on our health, but the health of the planet..... that is the education that I’m after. I don’t know, maybe there is no school for that. Maybe the education I’m after can only be obtained through experience. Over all I guess what I’m asking is how do I combat the conventional in school right now?

Dear Devyn,

You are a smart girl, who can see through the veil of illusion. That is the medicine of the Owl, known as the nighthawk in the Native American tradition. The people who can see are our teachers.

It is sad that conventional institutions, public schools and most universities, are still behind the times with regards to nutrition. Fortunately, some professors teach current scientific data, but many are stuck in old traditions and outdated material. I have seen great strides in environmental programs in universities, yet many of them don’t make a practice of what they teach (school cafeterias and on-site environmental practices, for instance).

One of the reasons I found for this, during my experience in dealing with schools and institutions, is that new information is coming out so fast that institutions (which must have approved curricula) don’t have the time or budget to keep up with the speed of our conscious and factual expansion.

One of the biggest roadblocks is money.  There is tremendous support from large food companies, Monsanto and big Pharma (as you put it) to keep old dietary guidelines in place. They have huge amounts of money invested in PR, which means wide circulation of biased scientific studies, stacked with their own agenda, as well as educational materials and large public relations campaigns (PR).  In addition to validating some less than excellent practices, the PR leaves a lot of people “thinking” that nutrition does not matter, and that pharmaceutical medicine is still the route to take for healing.  In other words, many still treat the symptom without even thinking of going to the root cause. Food, simply, is not thought of as being powerful enough to heal. We know now, from many personal cases, that another truth exists.

This mindset is changing rapidly, as consumers make better health and environmental choices, because they want and need something that will heal them. Many are sick and looking for answers that work. As the dollars turn, so do the practices. As for your question of where to learn: you are obviously learning from somewhere, so keep it up. There are many good doctors, scientists and health professionals who are writing excellent books. Some are resurrecting solid knowledge and practices that served us well, before fast-, convenient- and factory-food came along. Some are coming out with new vital information as to the exact science behind the value of what whole foods from a healthy earth can provide. The Internet has a wealth of knowledge, facts and wisdom.

One of the reasons I switched from writing and lecturing to teaching nutrition and food prep, was that I found most people genuinely understood the need to eat better, but they did not know how. I became exhausted with talking and began helping people navigate through the propaganda and learn new skills and practices. For instance, many still think that “low-fat” is a better choice than whole-fat foods. And, they are right, if they are choosing a low-fat option that comes from the factory, a grain fed cow or a rancid vegetable oil. That said, a whole-fat option is the best when it comes from dairy products of grass-fed cows that grazed in an organic pasture. The process of removing the fat results in more processing of the food, making it harder for the body to digest and assimilate.

Cold-pressed oils are another example where whole is better than low-fat. Did you ever try a low-fat olive oil? Yuk. EVO means Extra Virgin Olive Oil, which means the oil comes fresh from the first press in its whole form. Any oil that has to go through heat and over-processing loses some of its nutritional value, such is the case of low-fat anything. Not only in the nutritional value compromised,  but the processing is also harder for the body to digest causing weight gain and other problems.  Whole nuts, seeds and avocados are other examples of the good fats that are essential and thus precious nutrients for our cell function.

My focus is not to teach people a particular “diet,” but to help them navigate through all the material out there, and teach them how to eat from the earth and not the factory. And, of course, let’s make that a healthy Earth with clean air, water and soil.

Recently, I launched a new line of cultured vegetables that I have been selling at the Famer’s Market, here on Maui. I am stunned at the number of people who are sick and on special diets. Many are also very educated about the latest in nutritional healing protocols.  They are grateful for my product and buy it up.

I guess my advice to you is to teach those who you are teaching you, as well as your fellow classmates. When you have reports or papers to write, bring your professor or school the latest information you can find. Inspire a discussion.  Also, keep reading and visiting blogs that understand that the body is a system that mirrors the system of the Earth. When people understand the body as a system, they are usually turned on to stewarding it in a different way. There is a lot out there to learn.  In the summer or when school is out, you could also intern with someone. I recently had an Intern with me.  She started out thinking raw food was the only way to go. She knew nothing of cultured/fermented foods. Now, she has a well-rounded diet and is an expert at making cultured veggies. Her sugar intake in down, cravings gone and she is in balance.

You might also want to Intern on a farm. Many sustainable farms, here on Maui and all over the world, take on workers for a period of time, to live on the land and learn as they work.  Quite frankly, I have never met anyone more educated and with more intelligence than a sustainable farmer, an expert in body and soil health. They are the most conscious and informed people I know, and fortunately, the most fun, too.

Price Foundation, and the Natural Foods Expo (you can find high quality lectures on nutrition and supplements at these Expos).  Mercola’s website is awesome (www.Mercola.com), and so is the Health Ranger’s (www.NaturalNews.com).

Green Smoothie with Omega Rich Hemp Hearts

My new favorite smoothie! Here is what makes it perfect, the Hemp Hearts!

The other night I stayed with a friend and she made me a green smoothie the next morning. I was shocked at what she started putting in the Vita Mix. It was a creative concoction that truthfully sounded terrible to me, but it was surprisingly good. The best news is that it got me off my regular smoothie regime, which was getting boring.

I decided I needed a new taste and some new veggies. My purpose was to get some good fats, begin eating fresh Turmeric and a variety of greens.  So, I happened to have run across the most beautiful Italian Parsley I have even seen. Then I had some cilantro and romaine lettuce leaves leftover. It hardly seemed like enough, but I loaded the Vita Mix anyway. Then I added a piece of ginger, a whole lemon, a green apple and 1/3 cup of Hemp Hearts.

What made this smoothie so rich and satisfying was the Hemp Hearts. I love to make a milk out of them, which I do often along with sunflower seeds and buckwheat groats, but I never imagined them with greens. They just made this drink delicious. And, if Green Smoothies are delicious then you will drink more of them. The other good news is that Turmeric absorbs better when accompanied with a good fat - or good source of Omegas!

Try them. They are also a great snack on just about anything.

The Best Garlic Bread Ever!

GarlicToast I love Garlic Toast

Seriously, I love garlic toast so much I could eat it with everything. It really does not matter what it is.

Here is my favorite way to make it:

I like to use sourdough bread – organic of course - because it taste the best and it is a naturally rising bread. You can use French bread, rye or even some of the gluten free varieties made with almond flour, rice or millet. They are all good – just different flavors and textures.

Spread the bread with either olive oil or salt free pasture butter. Or if you want to get decadent mix olive oil and butter together.

Fresh garlic: Use a garlic press to mush the garlic. Put it right on to the bread and spread it around.

Sprinkle Celtic Sea Salt on top of the bread, butter and garlic.

Top with fresh chopped parsley.

If you don't have fresh garlic then garlic powder will do. Be careful with garlic salt as it can get too salty.

If you have some fresh Parmesan cheese handy, use some lightly to give it a rich deep flavor.

Broil until bubbly and crispy.

To store left overs: If there is any such thing, freeze them. When you are ready to enjoy them, warm or  toast them for a few minutes in a toaster or the broiler. Surprisingly they taste almost brand new!

Easy Vegetable Recipe for Breakfast

What’s for breakfast? During and after the holidays many of us are tempted to eat many different foods when traveling, visiting friends and relatives, going to parties and dining out. So, how do we get our 5 A Day? How about vegetables for breakfast, a huge bowl of them.  At least then your body will have received a good start and if you don’t eat veggies for the rest of the day, you will be covered.

Besides the benefit of having a wonderfully nutritious breakfast, you will have the treat of your life. Breakfast veggies are delicious, very easy and don’t take a bunch of time when you do them the “a la Oils” way.

For those of you who have watched my DVD’s already know the secret to easy, healthy veggies. For those who don’t, here is a sample:

In a small saucepan, heat water (use steamer if you like) to cook veggies in.

Add in your veggies and cook (steam) until tender. In this picture I used fresh string beans, yellow and green zucchini, and an onion. Once tender place in serving dish and add the following:

1.   Ground sesame seeds or pumpkin seeds. Sprinkle on top of the veggies.

2.   Barlean’s High Lignan Flax Oil - 1 tbsp per person or 1/4 cup if a large serving.

3.   Top with celtic sea salt or a splash of Tamari/Shoyu

When the oil is added to the veggies with the seed powder, instant gravy is created that enriches the flavor, depth and nutritional component of the dish.

If you want extra protein, add a slice of tofu, egg, piece of chicken, etc.  Or, you can add a grain like Quinoa, Millet or Amaranth.

 

Add your cultured veggies to the meal and your digestion is set for the day!!

Plantains - The Healthy Dessert Recipe

Plantains “a la” Coconut Butter These are the beautiful starchy, sweet fruits similar to bananas. They are wonderful sautéed or baked in coconut oil, Ghee, butter and/or with spices such as cinnamon and nutmeg.

Bananas Foster is the popular dish you may have heard of for Plantains. There are many other ways to make them that may be even more healthy and tastier too.

Peel and slice plantains. Depending on how much you are making, melt one or equal parts of both; coconut oil and butter, in a sauce pan. Add spices if using them. Pour liquid over plantains and bake at 350 for about 20 minutes.

 

Options

Add walnuts, pecans or any other nuts you might like.

 

Add brown sugar, maple syrup, honey or any other sweetener if desired.

My Holiday Wish for YOU!It has been an absolute pleasure helping people from all over the world eat better. It is thrilling for me to receive your notes, ideas, questions and thoughtful comments. Thank you. Since my body has been my own laboratory I continue to learn. I too have health issues that crop up now and then, some cravings along with lifestyle and scheduling challenges, and probably some core beliefs that effect me unknowingly in some way. Since nutrition, bad and good, has affected my life so dramatically I have chosen it as my path of stewardship. Sometimes, when witnessing the dramatic effects that take place with dietary changes I want to stand on top of the tallest mountain (the Teton's, of course) and shout out that food matters, and it matters a great deal. We need nourishing food grown with clean air, water and soil. Period. Nourishing ourselves does not stop at the table though. We know we also need to nourish ourselves with loving relationships, authentic expression, community to feel safe and whole, and a meaningful purpose. A good place to start with conscious awareness and positive action toward divine nourishment is with ourselves. How about for this next year we make a pledge together to feed ourselves everything that nourishes us.Let's start with food. Let's get to know more of it's sensuality, textures, aromas, nutrients, and flavors. Let's get to know more about where it comes from and how it is grown.

Let's get into it. For me, exploring my local food supply and getting get to know my farmers and food producers has increased my sense of community and nourished me more than anything. I recommend connecting to yours. Go to farmers markets, meet the people who grow your food. Ask your grocers to stock what you need, and ask your local artisans to provide food with ingredients that serve you and still bring you pleasure. They, like me, love your feedback and want to serve you. Let's create a mutually enhancing relationship through the food chain.Eating is one of the most intimate acts we do every day, several times a day. Food stimulates every one of our senses, and touches every organ of our body. It goes in and permeates every cell through an incredible process inside of us while it feeds our living system and keeps us alive, nourished and cleansed. It provides immense pleasure, community and satisfaction.

What better way to celebrate this incredible season, this time of transformation we are told, with dedicated stewardship to own bodies and the body of the Earth we live in. And, if you do want to make a difference in the world, if you want to have a meaningful purpose, how about having the focus of your purpose be YOU. How about becoming an impeccable steward of yourself.  From a healthy center you can feel amazing, accomplish anything, love and serve many.

Beet Kvass So you think this is a earthy rich Cabernet Sovignon that I bottled up myself. Wrong. I wish I was such a wine maker, but instead I make Beet Kvass. It won’t make you feel warm and fuzzy like a good Cab, but it will make your digestion warm and powerful so that when do drink the Cab you will tolerate it all the better.

Culturing in Temperate Climate - Getting Started with Dehydrating

Aloha Chef Teton,

You certainly have become a household name! I am in the process of converting myself, my husband and our 16 year old to your style of cooking and living. I bought your DVDs first after watching Hungry for Change and Food Matters and have signed up for your 4 week makeover. I have made a few dishes to ‘reel the family in’ and so far it is very successful. A little about me and then I have a lot of questions for you!

I was in an accident 3.5 years ago, have had 6 surgeries and ultimately had my hip replaced and a neurostimulator implanted this year. Other than that, I am 50, very cute and have a great sense of humor :^) … I have been off pain pills for 3.5 months and am not taking Tylenol either. I do enjoy a glass of wine and that helps manage the pain too. I have always been very athletic and eaten well but the surgeries and pain meds took its toll. I am still in physical therapy but all is coming along very well! I have been buying products and reading and have started attending presentations at a health food store. I did a 7 day and then a 3 day detox which helped tremendously.

Aloha Janet, Thank you for you letter. First, I must congratulations on your progress and mostly on your attitude. You sound wonderful! I will address your questions below in BOLD. Also, would you mind if I put this on the DM forum and my blog for others to see? Thank you! CT I live in FL in a house with limited space. The TSM fermentation crock I bought has specific temperatures to store the crock during fermentation. How do you manage this in your climate?

Quite honestly, I never paid any attention to the temperature or climate here. I am so used to it being mild. I leave my crock out in my living room on the floor, and sometimes in a cabinet. It can get quite warm and then in the winter cool down at night quite a lot. I have never noticed any problem at all. I don't think you will have a problem in a warm climate, it is a cold climate that may slow down the fermentation process. But all that said, good question that I will have to research more.

I am concerned about making a mess if I store it on a high shelf in an office closet.

I have never have them make a mess unless I am fermenting in a canning jar. They will often oooz, so I put a plate underneath them to catch the drips. The crocks never made a mess. As for smell, well, they can sure smell, especially if you use onions and garlic.

Will the garage work in our temperate months?

Not sure what you mean here, do you mean when it gets colder or warmer? I think the garage is fine, but if it gets very cold it will slow things down. We juice daily and with the vitamix, and Cuisinart, I have run out of counterspace! I know what you mean!!

Same question for the dehydrator. It says to not keep it outside. I have a screened in patio that I thought would work but I am not sure. Will a dehydrator damage wood if it is operating while on a wood surface?

Wow, you have the best questions. I don't think it will hurt wood. I keep mine out on my screened in patio quite often. I also cover it so the salt air does not get on it. I am sure it will be fine out there. You might want to check it often during use to make sure it does not get too hot for the wood.

One of my goals with the dehydrator is to create a lot of snack foods for the teenagers. What do you suggest to start?

Fruit is a very good start. Apples, banana's and other seasonal fruits are fantastic when dehydrated. Nuts and seeds are also good because you can flavor them with spices and even sweeten them with honey or maple syrup. Tomato's are also yummy when dehydrated if they are sweet and organic.

I am experimenting with cultured foods (I bought some kim chi and raw sauerkraut) with high hopes that my digestive woes will lighten up. I have added miller’s bran to my diet too. What are your thoughts?

Cultured Vegetable are the best, try to eat them daily with each meal. Start you day with a spoonful. I would also recommend bone broths made from organic whole chickens and bone marrow bones from healthy animals. My new DVD on Healing Foods (coming out in January) contains simple recipes for these. Basically you just boil the bones with salt and a little vinegar for about 36 hours (crock pots are great for this, but there goes more of your counter top space). Drink this beverage daily. It should be the only thing you drink with meals.
